You can appeal a conviction as soon as it is rendered. You can also wait until you are sentenced to appeal. The actual appeal period (assuming you are talking about a criminal offence) is 30 days from the date of sentence. That means you must file your Notice of Appeal within that 30 days. If you do not file within that time, you will have to bring an application to extend the time to appeal.
