Coop housing membership review

I have a membership review meeting tomorrow in the coop that I live in, in Winnipeg manitoba, Canada with the board of directors. Am I allowed to record the conversation between me and the board members without asking them for permission, finishing for court just so I have a record of what was said in case they say something different later. Is one party consent include me being aware. Please write a layman's explanation of the answer please no links or lawyer speech or case references and please only answer if you know for sure.
